Domaine Francois Cotat Sancerre Chavignol Rose 2023

Most rosé is made to be drunk within the year, but François Cotat's is a different proposition entirely — a wine John Gilman has called "one of the two or three greatest dry rosés in the entire world," made in a way that barely resembles conventional rosé production at all. The Cotat name has been synonymous with Sancerre for generations; historically, two brothers, Paul and Francis, bottled the family's wine jointly, until their sons François and Pascal took over in 1990 and began delineating the vineyards into their own separate labels. François farms just half a hectare of Pinot Noir among his four hectares in Chavignol and Amigny — vines around 90 years old, planted not on the famous steep, Kimmeridgian slopes of Monts Damnés or Culs de Beaujeu, but on the flatter, pebbly "Caillottes" section east of the village. The wine is given a short skin maceration for its delicate salmon-pink hue, then fermented with indigenous yeasts in a single, ancient, tartrate-crusted demi-muid that's been in family use for generations, bottled to the cycle of the moon. Production is vanishingly small — often fewer than a thousand bottles a year, sometimes barely a few hundred, historically kept mostly for family and a handful of lucky private clients.

The result drinks less like rosé and more like a red Burgundy in disguise: raspberry, white pepper, blood peach, and autumn forest floor unfold on the nose, with stone fruit, orange zest, and wildflowers layered over a distinctly chalky, Chablis-like minerality. The palate is structured and serious, built for real ageing rather than immediate consumption — many drinkers report it needs five years or more before it truly shows its full complexity, and continues to evolve for decades after that.
