Domaine François Cotat is one of Sancerre's last true traditionalists — a small, family-run estate making Sauvignon Blanc in a style almost unrecognisable from the appellation's more commercial norm: no commercial yeasts, no new oak, minimal intervention, and wines built with the kind of ageing potential more commonly associated with white Burgundy.
