Fraser McKinley arrived in the Barossa with no winemaking experience and a willingness to learn from the ground up. He trained at Torbreck and Standish, earned the trust of legendary grower Adrian Hoffmann, and in 2006 was handed the lease on four rows of Shiraz. What he's built from that beginning is now one of the most coveted wines in the country.

The Hoffmann Dallwitz comes from two plots on the Hoffmann family's Ebenezer site — vines planted between 1888 and 1912, and a second block from 1927, both on their own roots. Fraser farms them biodynamically, picks parcels at different times to balance freshness against richness, and selects only his finest casks for this wine. The result is a Syrah of genuine complexity: dark plum, blackberry and florals up front, with chocolate, mocha and spice building through a palate that is full-bodied but never heavy, finishing long and succulent.
