Pooley Riesling 'Butcher's Hill' is an extraordinary, single-vineyard expression of cool-climate Tasmanian Riesling, sourced from the steep, north-facing slopes of the historic estate in the Coal River Valley. Planted on dolerite-rich soils, this site produces fruit of remarkable power, pristine purity, and structural tension. Crafted by winemaker Anna Pooley, the wine opens with high-toned aromas of white flowers, kaffir lime leaf, wet slate, and candied lemon peel. On the palate, a laser-sharp beam of crystalline acidity drives concentrated citrus and green apple flavors across a dense, stony core, finishing bone-dry with exceptional mineral persistence and long-term cellaring potential.
