A benchmark village-level white Burgundy that consistently delivers the depth and complexity of a Premier Cru. Sourced from old Chardonnay vines (over 50 years old) across select parcels in Chassagne-Montrachet, it is crafted with PYCM’s signature low-intervention precision—pressed as whole clusters, fermented with native yeasts, and aged in larger, neutral 350L oak barrels with no bâtonnage (lees stirring). The result is a wine of remarkable balance and drive, revealing high-toned aromas of white peach, crisp Bartlett pear, lemon oil, toasted hazelnuts, and a distinct waft of flinty, struck-match reduction. On the palate, rich, concentrated orchard fruit is effortlessly counterbalanced by a dense, chalky mineral structure and electric, mouthwatering acidity that carries through to a long, saline, and beautifully refined finish.
