Fermented with wild yeasts and aged in larger, neutral oak barrels (demi-muids) to preserve site specificity and avoid excessive wood influence, the wine reflects PYCM’s signature style—striking a perfect balance between electric mineral tension and subtle, textural weight. In the glass, it reveals a brilliant pale gold hue with high-toned aromas of fresh green apple, lemon zest, white flowers, crushed limestone, and a signature hint of struck-match reduction. On the palate, a piercing beam of mountain acidity drives crisp orchard fruit and a chalky, saline-laced finish that punches far above its regional classification.
