Some of the most compelling cuvées at Domaine Ganevat are born not from careful planning but from crisis, and Les Rescapés — "the survivors" — is one of the most poignant examples. In vintages hit hard by spring frost, Jean-François found himself with only scattered handfuls of Savagnin across his parcels; rather than lose the fruit, he brought every surviving grape together into a single, small-batch cuvée. It's vinified the ouillé way — topped up regularly rather than left under a veil of yeast — and aged for around three years in old demi-muids without any addition of sulphur, letting the wine express Savagnin's full depth without tipping into the fully oxidative style the grape is famous for.

The result is a Savagnin of real precision and intensity: candied citrus and ripe apple on the nose, layered with dried fruit and a subtle flinty edge, opening onto a palate that's full-bodied yet remarkably taut, carried by a mineral tension that stretches the finish out with genuine elegance. It's a wine that turns adversity into something thrilling rather than merely serviceable — concentrated, precise, and true to its variety despite the odds it was made against.
