Hubert Lignier Bourgogne Symbiose 2023
Domaine Hubert Lignier is one of the elite addresses of Morey-Saint-Denis, with about 11 hectares mostly in Morey, Gevrey-Chambertin and Chambolle-Musigny, certified organic from the 2019 vintage. It is now run by Laurent Lignier, the fifth generation. Symbiose is the domaine's Bourgogne rouge, and the name is apt: it is a blend of parcels from different places, and one report on the 2021 describes fruit from vines in Vosne, Meursault and Pommard. Some vintages include a little Gamay, a nod to the traditional Burgundian "passe-tout-grains". Winemaking is minimal: native-yeast fermentation, partial whole-cluster, gentle extraction and mostly older French oak.
The result is an elegant, supple Bourgogne that brings Lignier's exacting standards to a humble appellation. Light to medium ruby, it shows cranberry, cherry and raspberry with floral and herbal notes and a touch of earth. The palate is silky and light-footed, with bright freshness and fine tannins, and a tasty, juicy finish.
