If you want to understand what Chablis is capable of at its absolute ceiling, this is where you start.

Montée de Tonnerre is widely regarded as the finest premier cru in the appellation — by many accounts closer in quality and complexity to grand cru than premier. Raveneau's holding here is extraordinary: ten separate parcels, vines aged between 20 and 60 years, spread across three hectares of prime Kimmeridgian limestone on the right bank of the Serein. It is the wine that defines the domaine's reputation for a reason, and it has done so consistently for decades.

In the glass it announces itself immediately — taut, mineral and chiselled, with an intensity that is almost Riesling-like in its focus. White flowers, lemon, saffron, oyster shell and flinty stone aromas give way to a palate of extraordinary precision: mouth-watering acidity, chalky extract, and a finish that is saline, persistent and completely dry. There is no softness here, no concession to approachability. This is a wine built on tension, and it rewards those who respect it enough to wait.

With age it becomes something genuinely rare. Mature bottles reveal layers of lemon curd, sea cave, chalk and iodine — a palate-staining, deeply mineral experience that places it alongside the finest white wines in the world, not just in Chablis.

Young vintages need time — five years minimum, ten or more to show their best. But when they arrive at their window, there is very little in white Burgundy that matches them.
