Domaine Dujac Puligny-Montrachet 1er Cru Les Folatieres 2016

Domaine Dujac is best known for its legendary red Burgundies from Morey-Saint-Denis — Clos de la Roche and Clos Saint-Denis chief among them — but the estate's small production of white wine carries exactly the same pedigree. Jacques Seysses founded the domaine in the late 1960s after cutting his teeth under Gérard Potel at the storied Domaine de la Pousse d'Or, purchasing what was then Domaine Graillet and renaming it, eponymously, Dujac. The estate has farmed organically since 2001 and now blends organic, biodynamic, and integrated pest management across its holdings, guided by a philosophy Jacques built on minimal intervention and genuine respect for site. Les Folatières sits on the westward slope of Puligny-Montrachet, southeast-facing at 250 to 270 metres, on shallow, red-brown topsoil thick with angular white limestone over compact bedrock once quarried as building stone under the name "Pierre de Chassagne." Dujac's holding here is notably larger than their parcel in neighbouring Combettes, planted with somewhat younger vines, and vinified with the same gentle, unhurried touch applied across the whole range — cool, extended fermentation and minimal racking to preserve freshness.

Across vintages the wine shows real consistency of character: pear, waxy yellow orchard fruit, and white flowers meet nutmeg, freshly baked bread, honeysuckle, and a touch of macadamia or hazelnut, framed by a deft hand with vanillin oak. The palate is medium-to-full-bodied yet fine-boned and bright, with real mineral drive, saline lift, and an anise-tinged finish that critics have repeatedly praised for its poise.
