Few Brunello producers are spoken of with quite as much reverence, and produced in quite as small a quantity, as Salvioni. The story starts almost by accident: Umberto Salvioni, an agronomist, made wine purely for the pleasure of sharing it with friends, never intending to sell a drop. It was his son Giulio and wife Mirella who, in 1984, shared a sample of their small-scale, artisanal wine with fellow winemakers — the enthusiastic response was enough to convince them to bottle their first official vintage in 1985. Four decades on, La Cerbaiola remains a genuinely tiny operation: just four hectares of hand-tended vineyard, split across three small sites at 420–440 metres southeast of Montalcino, on soils ranging from chalky schist to stony marl, with production deliberately capped at around 10,000 to 13,000 bottles a year. The wine ferments in steel, completes malolactic naturally, then spends up to four years ageing in large, traditional Slavonian oak casks split between two historic family cellars, before bottling without fining or filtration.
The result is Brunello of extraordinary purity and precision rather than sheer power — critics routinely describe it as speaking "less of volume and more of voice." Expect intense aromas of undergrowth and forest floor intertwined with red berries and ripe cherry, opening onto a structured, richly extracted palate with soft, present tannins and well-balanced acidity carrying through a genuinely long finish. It's built for real patience, continuing to develop and deepen for decades, evolving into a wine suited as much to quiet contemplation as to the table.
