Sourced from a prized, high-altitude parcel in Santenay known for its cool microclimate and stony, highly calcareous clay-limestone soils, the vineyard yields fruit with incredible natural tension. Caroline Morey coaxes greatness from this site using a blueprint of pure, low-intervention craftsmanship: the hand-picked grapes are gently pressed, and the juice is fermented naturally with indigenous yeasts before a patient maturation in large French oak demi-muids. This meticulous approach completely avoids heavy wood or tropical notes, instead capturing an incredibly focused, crystalline snapshot of raw limestone terroir.
In the glass, it reveals a pale, radiant straw-gold hue with brilliant green glints at the rim. The nose opens with a remarkably sharp and expressive bouquet of white peach, crisp green pear, and lemon curd, intricately layered with complex undertones of crushed wet stones, white flowers, and a classic hint of struck-match reduction. On the palate, it delivers a masterful performance of tension and energy; an initial wave of mouth-watering, citrus-driven acidity drives across the tongue, beautifully balanced by a silken, slightly chalky texturing gained from its time on the lees. It finishes completely bone-dry and vibrant, leaving a long, thirst-quenching trail of smoky minerality and a clean, saline-infused grip.
