Founded in 1818 by Nicolas François Billecart, who married Elisabeth Salmon and combined their names for the new house, Billecart-Salmon holds the distinction of being the oldest family-owned and continuously family-operated house in all of Champagne. Its rosé carries genuine historical weight of its own: when the house released "Le Rosé" in 1970, it effectively announced rosé Champagne as a serious, luxurious category in its own right, at a time when pink fizz was still considered something of a novelty. The cuvée is made using the assemblage method — blending in a small proportion of still red Pinot Noir rather than relying on skin-contact saignée — typically combining around 40-45% Chardonnay, 30-35% Pinot Noir, and 20-30% Meunier, built on a base vintage supplemented with a substantial 40%+ of reserve wines drawn from multiple prior harvests for consistency and depth. True to the house's reputation for precision and restraint, the grapes are gently pressed and cool-fermented to preserve freshness, then aged a minimum of three years on lees in the chalk cellars beneath Mareuil-sur-Aÿ.
The result is exactly what's made it a benchmark of the category for over half a century: a radiant, pale salmon-pink hue with graceful effervescence and a fine, persistent mousse, opening into a delicate bouquet of rose, peony, red berries, and guava. The palate is creamy and smooth, evolving through wild strawberry and citrus zest to a long raspberry finish — light, balanced, and remarkably precise. Robert Parker called it "a consistent winner," praising its "gorgeous sweet cherry, strawberry, and mineral-like scents" alongside real depth and persistence.
