Anne et Jean-Francois Ganevat Savagnin Arbois Sous Voile 2017
Where most of Ganevat's Savagnin is deliberately kept fresh and topped-up — ouillé, in the local term — this cuvée goes the other way entirely, embracing the Jura's oldest and most singular tradition. Made from Savagnin that survived a brutal frost, grown on marl-limestone soils, the wine undergoes whole-cluster fermentation and full malolactic before being left in barrel for a full 48 months under voile — the natural veil of yeast that forms on the wine's surface and slowly, deliberately oxidises it, the same method behind the region's legendary Vin Jaune. No topping up, no punch-downs, nothing added along the way except a small dose of sulphur at bottling. It's Ganevat working in the most traditional Jura idiom there is, but with his own signature restraint — aiming for a little more lift and elegance than the fully committed oxidative style typically delivers.
The result sits somewhere between a classic Vin Jaune and Ganevat's own personal reading of it: walnut and candied citrus dominate the nose, laced with honey, warm spice, and a distinct mineral salinity, the texture elegant and creamy yet held together by real tension rather than sprawling into looseness. The palate is unctuous on entry, deeply saporous, and finishes with startling persistence — a wine that keeps unfurling in the glass for hours.
