Old Chardonnay vines rooted in grey Lias marl and shimmering, iridescent marl give La Gravière its name and its character — a négociant cuvée that blends purchased fruit with the family's own, letting Jean-François and Anne work the same terroir-first magic across parcels beyond the home estate. The wine is fermented with native yeasts and left on its lees for two to three years, following the same unhurried, hands-off philosophy that runs through everything the Ganevats touch: hand-harvesting, no new oak, and bottling without added sulphur. It's a wine made the slow way, by a producer once described as spinning grapes into gold, and it shows in every glass.

The result is bright and beautifully balanced, with a fine, saline minerality running through a long, persistent finish, and enough underlying vivacity to keep it lively despite the extended élevage. It's built to age gracefully over a decade, yet its energy and precision make it just as rewarding young — pour it with fresh shellfish, a simple roast chicken, or a wedge of Comté, and let its salty, mineral drive do the rest.
