Every so often, a paper nautilus shell — impossibly delicate, wafer-thin, and geometrically perfect — washes up on a secluded beach in the Marlborough Sounds, a rare and distant cousin of the nautilus that gives this Hill-Smith family-owned estate its name. It became the inspiration for a genuinely different style of Marlborough Sauvignon Blanc: after thirty years favouring texture, weight, and length over brazen tropical fruitiness, winemaker Clive Jones took that philosophy to its furthest point with this tiny, single-parcel bottling. The fruit comes from the estate's oldest vineyard, planted at Renwick in 1992 on stony, free-draining soil that naturally limits vigour and yield. It's hand-picked, chilled overnight, and whole-bunch pressed for exceptionally fine juice, then fermented on solids in a large French oak cuve using non-Saccharomyces yeast for a slower, warmer ferment, before resting on lees for seven months. Total production runs to just a few thousand bottles a vintage.

The result bears little resemblance to typical passionfruit-and-gooseberry Marlborough Sauvignon: expect citrus peel, wet stone, and hazelnut, with beeswax, lanolin, and a faint brininess — even a whisper of white miso and enoki mushroom in more evolved vintages — layered over a creamy, textural palate and a long, dry, mineral-driven finish.
