Sourced from old Chardonnay vines, fermented with native yeasts, and aged in neutral 350L oak barrels with zero lees stirring, the wine opens with high-toned aromas of fresh green apple, lemon peel, white flowers, and PYCM’s signature flinty, struck-match reduction. On the palate, it exhibits weightless energy and focus, weaving crisp orchard fruit around a laser-like beam of minerality and electric acidity, leading to a long, chalky, and vibrant finish.
