An iconic, high-altitude Premier Cru expression that highlights one of Saint-Aubin’s absolute finest, steep, south-facing sites. Benefiting from thin, limestone-rich soils and exceptional solar exposure, this 100% Chardonnay is fermented with wild yeasts and aged in larger, neutral 350L oak barrels with zero lees stirring to maintain absolute purity and tension. In the glass, it opens with brilliant, high-toned aromas of white peach, citrus zest, honeysuckle, and crushed stone, underlaid by PYCM’s hallmark flinty, struck-match reduction. On the palate, the wine delivers a striking contrast of rich, sun-ripened orchard fruit and electric, mouthwatering acidity, bound together by a dense, chalky mineral core and an extraordinarily long, saline, and crystalline finish.
