Churton Sauvignon Blanc is a definitive, estate-grown benchmark that challenges ordinary regional expectations, offering a deeply intellectual and terroir-driven alternative to the typical Marlborough style. Established by Sam and Mandy Weaver in 1997, the estate is perched on a unique, elevated hillside terrace 150 meters above the Waihopai Valley floor, safely removed from the fertile, frost-prone flats. The vineyard is farmed under strict certified organic and biodynamic practices, featuring dense, old-world plantings on complex loess-over-clay soils with excellent water retention. Winemaker Sam Weaver treats the hand-picked fruit with minimal intervention: the grapes are gently whole-bunch pressed and fermented with indigenous wild yeasts in temperature-controlled stainless steel vats. Left to mature on its fine lees for several months to build weight and textural complexity, this highly focused wine completely swaps aggressive commercial processing for old-world texture, poise, and structural integrity.
In the glass, it shows a pale, luminous straw-yellow hue with bright greenish glints at the rim. The nose completely eschews one-dimensional tropical notes, opening instead with a highly sophisticated and expressive bouquet of white peach, fresh elderflower, and lemon pith, beautifully underlaid with complex notes of wet stones, wild thyme, and a distinct chalky minerality. On the palate, the wine delivers a masterclass in texture and vertical tension, feeling wonderfully fleshy and mouth-coating yet remarkably light on its feet. A concentrated core of citrus and crunchy green orchard fruit is framed by a vibrant, saline-driven acid spine and a subtle, phenolic grip that makes the mouth water. It concludes with an exceptionally long, clean, and savory finish that echoes with smoky mineral notes and lime zest.
