Founded in 1999 by Antoine Foucault (son of the late Charly Foucault of the mythical Clos Rougeard) and Caroline Boireau, the estate is located in Chacé, within the premium heart of the Saumur-Champigny district. Foucault applies an uncompromising, old-school methodology to his 6 hectares of vines, which are farmed strictly under certified organic and biodynamic principles. The estate's core Saumur Blanc is sourced from mature Chenin Blanc vines planted on steep hillsides dominated by Tuffeau—the famous, porous Cretaceous limestone bedrock of the central Loire. In the cellar, Foucault practices extreme patience and minimal intervention: the fruit is pressed slowly, and fermentation begins spontaneously with native wild yeasts in deep, damp, 16th-century underground tuffeau caves. The wine undergoes a hyper-extended, cool maturation on its fine total lees for up to 24 to 36 months in neutral French oak casks, with zero temperature control, no battonage (lees stirring), and minimal sulfur additions, resulting in a texturally majestic white built for deep cellaring.

In the glass, it reveals a luminous, medium straw-gold color with brilliant pale emerald glints. The nose is a striking, highly complex tour de force, opening with a classic, high-toned bouquet of bruised yellow apples, comice pear, and lemon curd, seamlessly interwoven with intricate, savory signatures of fresh honeycomb, wool oil (lanolin), crushed wet stones, and a faint hint of reduction. On the palate, the wine balances rich, phenolic volume with a piercing, architectural verticality. A deeply concentrated, waxy core of dried stone fruits completely wraps around the tongue, effortlessly counterbalanced by a razor-sharp, enamel-melting spine of natural cool-climate acidity. The underlying porous tuffeau limestone bedrock drives a profound, chalky mid-palate texture and a persistent wave of smoky, mineral salinity that makes the mouth water. It concludes with an exceptionally long, dry, and clean finish, leaving a lingering trail of lime rind, dried chamomile, and a firm, mineral-infused grip.
