 Founded by the legendary Marc Ollivier and now masterfully guided by Rémi Branger and Gwénaëlle Croix, Pépière is a bastion of old-school, organic, and biodynamic excellence in the western Loire Valley. The 'Briords' cuvée is a single-vineyard masterpiece sourced from a prized 3-hectare parcel of historic old vines (vieilles vignes) planted back in 1930. Unlike the broader region's common granite soils, this unique vineyard sits on a highly localized bedrock of fractured Gabbro—an ancient, dark green volcanic rock formed deep within the earth's crust—heavily layered with a topsoil of clay and silty sand. This dense, mineral-rich volcanic geology forces the ancient root systems deep into the bedrock, imparting a remarkably structural, chiseled, and high-tensile personality to the wine.

Following a highly traditional, minimalist blueprint, the hand-harvested fruit is pressed gently and fermented slowly over several weeks using only indigenous wild yeasts in subterranean, glass-lined concrete vats. To preserve its raw terroir energy, the wine is aged patiently sur lie (on its fine lees) for roughly 8 months with zero battonage (lees stirring). It is bottled without cold stabilization and with only a very light filtration, capturing the natural carbon dioxide from fermentation to maintain a vibrant, prickly freshness.

In the glass, it pours a brilliant, crystal-clear pale straw color with pale lime-green reflections. The nose is instantly explosive, high-toned, and intensely marine-forward, greeting the senses with a crystalline bouquet of green apple skin, fresh lemon pith, and white peach, intricately overlaid with powerful, hallmark nuances of crushed oyster shells, wet river stones, sea spray, and a faint hint of fresh sea lettuce. On the palate, the wine delivers a masterclass in linear precision, energy, and electric vertical drive. The entry is light-to-medium-bodied and intensely focused, coating the mouth in a vibrant wave of crunchy citrus fruit before being sliced wide open by a razor-sharp, enamel-melting spine of natural, cool-climate acidity. The underlying Gabbro bedrock asserts itself profoundly on the mid-palate, introducing a deeply tactile mineral weight and a persistent wave of mouth-watering, oceanic salinity that makes the mouth water. It finishes bone-dry, exceptionally clean, and long, leaving behind a persistent trail of lime rind, white pepper, and a tight, chalky mineral grip.
