Established in 1995 by Eric and Christine Nicolas, Bellivière has become a cult icon in the Sarthe region of the northern Loire Valley, renowned for its uncompromising biodynamic farming and precision. 'Le Rouge-Gorge' (named after the European Robin) is crafted from the estate's oldest vines, some exceeding 80 to 100 years of age, rooted in a complex terroir of tuffeau limestone, clay, and fractured flint (silex). Pineau d'Aunis is a notoriously difficult, thin-skinned variety that produces wines of exceptional transparency and peppery intensity. Eric Nicolas handles this historic fruit with total reverence, utilizing a gentle fermentation with native wild yeasts and aging the wine for 12 to 14 months in seasoned French oak barrels to preserve its crystalline, mineral-driven energy.

In the glass, it displays a bright, translucent ruby hue with soft garnet glints, reminiscent of a delicate infusion rather than a heavy red. The nose is instantly explosive and uniquely aromatic, unleashing a high-toned bouquet of wild strawberries, cranberries, and rose petals, seamlessly interwoven with a massive, hallmark signature of freshly cracked white and pink peppercorns. As it breathes, savory nuances of damp earth, dried orange peel, and incense emerge. On the palate, the wine delivers a masterclass in weightless verticality and structural precision. The entry is lean and light-to-medium-bodied, coating the mouth in an energetic wave of crunchy red fruit before being driven by a piercing spine of natural acidity and a fine-grained, silty tannic framework. The flinty soil makes its presence felt through a persistent, mouth-watering salinity and a smoky mineral grip that defines the back palate.
