Christophe et Fils Chablis 1er Cru Mont de Milieu is a striking, highly focused expression of Premier Cru Chardonnay that highlights the immense talent of Sébastien Christophe, one of Chablis' most respected modern vignerons. Sourced from the prestigious Mont de Milieu vineyard—a prized, south-facing slope on the right bank of the Serein River—the vines enjoy optimal sun exposure, which coaxes excellent ripeness while maintaining Chablis' signature cold-climate tension. The vineyard is defined by its deep, ancient Kimmeridgian limestone soils, packed with fossilized prehistoric oyster shells. Christophe vinifies this parcel with meticulous minimalist care: the fruit is gently pressed, and the juice undergoes a cool, spontaneous fermentation primarily in stainless steel vats, with a tiny percentage aged in neutral, old French oak barrels to build texture without masking the fruit. The result is a wine that beautifully balances fleshliness with a laser-sharp, mineral-driven core.

In the glass, it shows a pale, radiant straw hue with brilliant greenish-gold glints. The nose is exceptionally chiseled and expressive, opening with a vibrant bouquet of yellow orchard fruits, fresh lemon curd, and white peach, layered intricately with notes of oyster shell, wet flint, and white flowers.
