Named for the lieu-dit that gives it its fruit, Montferrand sits close to the legendary slopes of Château-Chalon and Voiteur, on grey Lias marl that Jean-François Ganevat and his sister Anne consider some of the finest Chardonnay ground in the Jura. The old vines here are farmed biodynamically and hand-harvested, then vinified with wild yeasts and given an extraordinarily patient upbringing — aged on its lees in older 600-litre demi-muids for anywhere from three to five years, topped up throughout to guard against oxidation, and bottled without fining, filtration, or any addition of sulphur. It's the kind of unhurried, obsessive élevage that has made "Fanfan" a cult figure among natural wine drinkers and Burgundy purists alike — a winemaker who treats a single Jura hillside with the same reverence most reserve for grand cru terroir.

The wine that emerges is genuinely singular: a complex nose of flint and gunsmoke, white-fleshed fruit touched with honey, and toasted hazelnut, opening onto a broad, mineral-driven palate lifted by fresh citrus and almond, before finishing long, saline, and lightly spiced. It hovers thrillingly between the plush generosity of a great white Burgundy and the nervy, oxidative finesse the Jura does like nowhere else — a wine of real tension and depth rather than novelty. Give it an hour in the decanter and pour it with roast chicken, aged Comté, or a simple grilled fish; this is Montferrand at its most persuasive, and proof that in the right hands, Chardonnay from the Jura can stand shoulder to shoulder with anything from the Côte d'Or.
