Located in the heart of the famed Quarts-de-Chaume appellation, this historical south-facing amphitheater enjoys a legendary reputation for sweet wines. However, visionary proprietor Ivan Massonnat created a revolution by vinifying this exceptional terroir completely bone-dry. The 'Les Quarts' plot features a prized matrix of ancient pudding stones, sandy clay, and a deep bedrock of blue schist. Farmed under strict certified biodynamic practices with microscopic yields, the old vines yield fruit of astounding concentration. In the cellar, the wine is treated with absolute minimalist precision: a slow, spontaneous fermentation driven by indigenous wild yeasts in seasoned French oak barrels, followed by an extended, quiet maturation on its total fine lees.
In the glass, it pours a deep, radiant straw-gold color, instantly unleashing a multi-layered and highly intellectual bouquet. The nose opens with an intense, mesmerizing wave of baked yellow quinces, preserved lemons, and bruised orchard fruits, beautifully interwoven with complex signatures of beeswax, damp wool, crushed flint reduction, and white truffles. On the palate, the wine delivers a masterclass in weightless power, structural density, and electric vertical tension. The entry is remarkably broad, fleshy, and highly tactile—coating the mouth in a luxurious, waxy wave of dry savory fruit—before being instantly chiseled wide open by a razor-sharp, enamel-melting spine of blue schist acidity. The finish is virtually eternal, driving home a textbook line of salty mineral tension, lemon pith, and a clean, bone-dry grip that leaves the mouth watering.
