Critic tasting note: "Les Parcelles is sourced entirely from the Paillard's home village of Bouzy, and from 22 plots of the family's sustainably-farmed vines, now averaging 25+ years. As noted by the XV on the label, this is based on the 2015 vintage (70%), and is a mix of 70/30 pinot noir / chardonnay (the latter an anomaly in PN-centric Bouzy), disgorged in June 2020 after 4 years on lees, and with less than 2 g/l dosage. White cherry, subtle wild strawberry, red apple lead the generous medium+, palate, based by meringue and fresh dough. Acidity is bright, carrying this through a lightly spiced finish.
