Under the meticulous stewardship of Faiveley, which acquired the historic house in 2014, Billaud-Simon has maintained its legendary reputation for producing laser-focused, chiseled wines. The fruit for this signature village cuvée is sourced from four premium, organically managed estate parcels spread across the left and right banks of the Serein River, with an average vine age of over 30 years. These low-yielding vines are rooted in Chablis' famous Kimmeridgian limestone bedrock—a dense matrix of ancient marine clay and fossilized oyster shells (Exogyra virgula). In the cellar, winemaking is executed with pristine, temperature-controlled minimalism: 100% of the fruit undergoes a slow, spontaneous fermentation driven by native wild yeasts in stainless steel vats. The wine is then aged for 15 to 18 months on its fine lees with zero oak contact, ensuring that the crystalline, mineral-driven energy of the soil remains completely unmasked by timber.
In the glass, it displays a bright, translucent pale-straw hue with shimmering, electric green reflections at the rim. The nose is instantly expressive, precise, and mineral-forward, unlocking a classic bouquet of crunchy granny smith apples, lemon zest, and white peach, intricately interwoven with signature nuances of crushed oyster shells, wet chalk, sea spray, and a faint hint of fresh tarragon. On the palate, the wine delivers an absolute masterclass in tension, structural transparency, and vertical drive. The entry is lean, light-to-medium-bodied, and remarkably focused, coating the mouth in an energetic wave of juicy citrus pith and sour orchard fruit before being instantly sliced open by a piercing, enamel-melting spine of natural limestone acidity. The ancient marine bedrock makes its presence felt through a deeply tactile, chalky mid-palate texture and a persistent wave of mouth-watering salinity that completely enlivens the back palate.
