Sourced from old Chardonnay vines planted in the 1960s and 1970s, this cuvée captures the cooler, high-calcium limestone soils of Les Vergers, yielding a wine defined by exceptional racy tension, mineral drive, and floral elegance. Vinified with minimal intervention in larger 350-litre oak barrels (no more than 30% new) and aged without bâtonnage, Caroline Morey ensures maximum site expression and crystalline purity over heavy wood.
In the glass, it reveals a focused and aromatic bouquet of crisp green apple, pear, and citrus confit, layered with notes of crushed chalk, subtle white blossoms, and a hint of warm hazelnut. On the palate, the wine delivers medium-bodied concentration with a sleek, fine-boned texture. Sappy orchard fruit and lime zest are seamlessly framed by a piercing beam of cool-climate natural acidity and a distinct, mouthwatering saline minerality.
